Beer can stands (3) Walmart Some good grilling wood (Mesquite, cabernet, and hickory wood combo) (Linen 'n Things) 3 3.5# roasting chickens 3 cans beer Olive Oil 3 tblsp. sea salt 1 tsp. sweet basil 1 tsp. black pepper 1 1/2 tsp. onion powder 1 tsp. garlic powder 2-3 tblsp. GAL&C steak and meat seasoning (Great American Land & Cattle) 1 tsp. table salt 3 small onions, peeled and clean, left whole Wash the stands before using. Cut the part of the chicken that goes over the fence last, off. Rinse chicken under cold water and pat dry with paper towel. Take about 1/3 cup of olive oil and rub all over chickens, top and bottom etc. Drink 1/2 of each can of beer, leave remainder in can, place cans in holders. Now don't feel too good just yet... mix remaining dry ingredients together and rub all over chickens.
Get fire ready in grill ahead of time. Place enough charcoal briquettes to cover bottom of grill and a bit more for another layer. Take about 3 handfuls of wood chips and place in bowl, cover with water. After fire is going, squeeze water out of wood chips and put atop f coals. Grill will smoke quite a bit. Place larger open end cavity of chicken over beer can (in holder). Stuff small onion in top end of chicken to seal in juices and flavour. Place on grill and cook approx. 1 3/4 hrs. - 2hrs. with cover on. Be sure to check chicken every half hour for doneness. The meat may be a bit reddish due to the seasonings. As long as the juices run clear your ok to go!!! Enjoy!
